  • Daily Recipe: One Pot Veggie Couscous

This one was submitted by my wife’s friend Keri. I have never tried couscous- I was hoping to post this and get peoples feedback. I am a bit scared to try it. I am your typically steak and potatoes type guy. So couscous really does scare me. It sounds yummy as a meal- but I need some encouragement if I am going to try to make it and then eat it. Check out and tell me what you think?

    This is Cous Cous

    This is Cous Cous

    2 Tbsp. olive oil
    1 small onion, finely chopped
    4 Cups baby spinach
1 (15 oz.) can of white beans, drained and rinsed
1 Cup cherry tomatoes, each cut in half
    1 shallot, finely chopped
2 1/4 cups low sodium chicken broth
1 (10 oz.) box of Couscous (I like the Whole Wheat kind, it’s better for you and doesn’t taste any different)
    Salt and Pepper
    1/3 cup of grated Parmesan

    1. Warm olive oil in a medium saucepan over medium heat. Add chopped onion and cook for about 3 minutes, stirring occasionally.
    2. Add the spinach, white beans, cherry tomatoes and shallot. Stir constantly for about 2 minutes until the spinach is wilted.
    3. Add chicken broth and 1/2 teaspoon of salt and bring mixture to a boil.
    4. Stir in the box of Couscous, Cover the pot and remove it from the heat. Let stand for 5 minutes.
    5. Stir in the Parmesan cheese and pepper and serve.

    Varieties:
Use veggie broth instead of chicken.
    Stir in cooked meat
    Use different beans

If you like it- tell me- it is your job to convince me to make this.

    1. Hey Kyle,

I haven’t tried this particular couscous, but I do like it. It’s a nice change sometimes from rice or potatoes as a side dish.

    2. Apparently, I have been missing out on the world of couscous. It is on our “buy” list for this week. So i will let everyone know if it is a success in our house.

      Thanks for the comment
